Sauté for Immediate Use or Freezing
You will need:
Fresh shiitake mushrooms
Sharp knife
Cutting board
Large frying pan
Spatula
Oil (canola or olive), butter or margarine
What to do:
Remove stems from mushrooms
Slice caps to uniform thickness
Heat oil, butter or margarine in frying pan- the small pieces of mushroom should sizzle slightly when placed in oil
Use the spatula to stir the shiitake slices to coat with oil
Cook until soft, but not crispy
*At this stage, shiitake is ready to use in a recipe
To freeze for future recipes:
Measure out 1 or 1/2 cup into snack bags.
Place several small bags in a larger freezer bag for storage up to 1 year.
