Sauté for Immediate Use or Freezing

You will need:

  • Fresh shiitake mushrooms

  • Sharp knife

  • Cutting board

  • Large frying pan

  • Spatula

  • Oil (canola or olive), butter or margarine

What to do:

  1. Remove stems from mushrooms

  2. Slice caps to uniform thickness

  3. Heat oil, butter or margarine in frying pan- the small pieces of mushroom should sizzle slightly when placed in oil

  4. Use the spatula to stir the shiitake slices to coat with oil

  5. Cook until soft, but not crispy

*At this stage, shiitake is ready to use in a recipe

To freeze for future recipes:

  1. Measure out 1 or 1/2 cup into snack bags.

  2. Place several small bags in a larger freezer bag for storage up to 1 year.
