Fresh Onion and Shiitake Frittata

You will need:

  • 4-5 eggs

  • 1/2 cup sautéed shiitake, cooled to room temperature (see Slice and Sauté Recipe)

  • 1/4 cup diced onion or shallot

  • 1/2 cup shredded cheddar cheese

  • 1-2 tablespoons butter or margarine

  • Non-stick frying pan with lid and spatula

  • Salsa for serving

Preparation:

  1. Whisk eggs until well beaten, mix in shiitake and onion

  2. Melt butter in the frying pan over medium heat

  3. Pour in egg mixture and cover, reduce heat slightly to medium-low

  4. Cook until the center of the frittata is cooked through

  5. Sprinkle the shredded cheese over the frittata, then cover for 30 seconds more to melt the cheese

  6. Gently slide the frittata onto a serving plate, slice into wedges, and serve with your favorite salsa or hot sauce.
