Zucchini, Cheese & Shiitake Custard

You will need:

  • 2 quart shallow baking dish

  • 1-2 tablespoons butter or margarine

  • 4 eggs

  • 2 cups grated jack cheese (4-5 oz)

  • 2 cups grated cheddar cheese (4-5 oz)

  • 1/2 cup seasoned dry bread crumbs

  • 1/2 cup sautéed shiitake (see Slice and Sauté Recipe)

  • 1-2 cloves garlic, minced or pressed

  • 2 tbsp minced onion or shallot

  • 4 cups grated zucchini (3 medium-small zucchini)

  • 1/2 cup grated Parmesan cheese

Preparation:

  1. Coat bottom and sides of baking dish with butter/margarine

  2. In large mixing bowl, whisk eggs

  3. Stir in jack and cheddar cheese, mushrooms, garlic and onion

  4. Stir in bread crumbs, mixing completely

  5. Using a rubber scraper, fold in zucchini

  6. Scoop into prepared baking dish, sprinkle top with Parmesan cheese

  7. Bake, uncovered at 350 degrees for 45 minutes, until center is firm

  8. Allow to stand for 10 minutes before serving
