If You Build it, They Will Come

We finished the build! Two laying yards, capable of holding over 500 logs for the next several years!

Now onto the logs!

Soon it will be time to harvest the substrate logs from the abundant forests that surround our laying yards. To ensure optimal production of shiitake mushrooms, we must select our logs specifically for the spawn that we are using. In order to accomplish this in the winter when there are no leaves on the trees, we called Dr Johann Bruhn back down to Southwest Missouri for his expertise in tree identification. Based on bark texture and patterns, he was able to identify and select a number of trees for us to fell.

In just a few weeks it will be time to fell our logs in preparation for innoculation!
